Frozen peas in butter sauce do the heavy lifting here, while zucchini strips get simmered until just tender and a splash of diced pimento adds a little color and sweetness.
Toss it all together and you’ve got a bright, buttery side dish for two that pairs with just about anything from grilled chicken to pan-seared fish.
Kitchen Tips
- Simmer the zucchini until the water fully evaporates so the dish doesn’t end up watery
- Cut the zucchini into thin, uniform strips so they cook evenly and match the size of the peas
- This scales up easily if you’re feeding more people; just use a bigger skillet
