Cornish Hen

Ingredients

1 gallon chicken broth
1 cup sake
1 ounce ginger root sliced
1 each scallions, spring or green onions sliced
1 each garlic clove pared, minced
1 each anise star
1 each clove
1 each cinnamon stick broken
6 each cornish game hens breasts, halves
18 each asparagus spears thin, blanched
2 cups sashimi rice cooked
1 each sweet red bell pepper blached, peeled, sliced
1 each green bell pepper blanched peeled, sliced
3 each bok choy baby
6 each broccoli florets chinese, blanched

Directions

Combine chicken stock, sake, ginger, scallion, garlic and spices in pan; heat to simmering.

Wrap each breast half around 3 asparagus spears, arranging spears to create fan.

Place rice and vegetables in bamboo steamer; place prepared breasts over rice.

Cover with bamboo lid; steam for 15 to 18 minutes.

Caribbean Christmas Ring

I have been making this every year since the recipe came out in the magazine (2000 I think it was) and I get nothing but rave reviews. Every year my co workers ask me to make this, and I make it for every Christmas employee dinner. It is among the first to vanish.
