Sherilyn's Bbq Chicken Burritos with Corn Relish and Guacamole

Ingredients

1/2 bottle barbecue sauce
2 each chicken breast halves, boneless and skinless
8 each flour tortillas
1 cup monterey jack cheese
2 cups corn thawed
1/8 each sweet red bell pepper minced
1/8 each green bell pepper minced
1/8 each jalapeno pepper minced
1/8 each onion minced

Directions

Slice chicken into strips.

Marinate in barbecue sauce at least 2 hours.

Grill using stove top gril or grill pan; set aside.

Cool and shred or thinly slice then place in a heated oven to warm.

Corn relish: Combine corn, peppers, onion, cilantro and jalapeno.

Mix in oil and vinegar.

Salt and pepper to taste.

To assemble: Cook tortillas, if using fresh, or warm purchased tortillas.

Place cheese, chicken, corn relish and guacamole in the center and roll.

American Garlic And Parsley Bread For Bread Machines

I have made this bread so many times that I have lost count. It is great with a spagetti dinner. You can also make the dough and shape into rolls which were a big hit when I made them for a ladies' salad lunch.
