This homemade Butterfingers recipe uses five simple pantry staples to create that signature crispy, flaky peanut butter candy, then coats it in a shell of melted chocolate.

The trick is cooking the sugar syrup to hard crack stage, then stirring in warmed peanut butter fast before everything seizes up. Work quickly and you’ll be rewarded with that shatteringly crisp texture that makes Butterfingers so addictive.

Kitchen Tips

  • Warm your peanut butter in the microwave for 30 seconds before adding it to the hot syrup. Cold peanut butter will cause the mixture to seize.
  • Use a candy thermometer. There’s no shortcut for hard crack stage.
  • Score the candy while it’s still warm but firm enough to hold its shape. Wait too long and it’ll shatter unevenly.
  • Let pieces cool completely before dipping in chocolate, or the coating won’t set properly.

Directions

Cook corn syrup, sugar, and water to 310 degrees F., remove from heat, stir in warmed peanut butter until completely blended.

Pour onto greased cookie sheet and score into pieces.

When cool and hard, dip into melted chocolate.
