35 minThis is the kind of meal you throw together on a Tuesday when the fridge is looking bare and the kids are already asking what’s for dinner.
Ground chicken cooks up with onions and colorful bell peppers, then gets stirred into a creamy mushroom sauce with cooked pasta and mixed vegetables.
Five minutes with the lid on and everything melds together into a saucy, satisfying skillet dinner.
One pan. Thirty-five minutes. Everybody eats.
Kitchen Tips
- Use low-fat cream of mushroom soup. It keeps the sauce creamy without making it heavy. Thinning it with a half cup of water gets the consistency just right.
- Frozen mixed vegetables work great. Just thaw them first so they don’t drop the temperature of the skillet and slow everything down.
- Any short pasta will do. Rotini, penne, elbows. Whatever shape you have on hand catches the sauce the same way.

In a skillet, heat oil over low heat.
Add chicken, onions, and bell peppers.
Cook until chicken is no longer pink and vegetables are tender.
Stir in cream of mushroom soup, water, pasta, and mixed vegetables.
Cover and cook over low heat for 5 minutes.
