Chicken Czardas is a lighter spin on the Hungarian-style creamy chicken and mushroom dishes that use sour cream. This version swaps in low-fat yogurt and finishes with a dusting of paprika for that signature warm, rosy color and peppery sweetness.

The whole dish comes together in one skillet in about 15 minutes. Chicken strips cook first, then onion and mushrooms get a quick saute. Sherry deglazes the pan, arrowroot thickens the liquid, and yogurt gets stirred in at the very end.

Not boiling after the yogurt goes in is critical. Yogurt curdles under high heat and turns grainy. A gentle warm-through is all it needs to create a smooth, creamy sauce that clings to the chicken and mushrooms.

Pro Tips

  • Cut the chicken into uniform strips so they cook at the same rate. Thick pieces stay raw while thin ones dry out.
  • Arrowroot thickens at a lower temperature than cornstarch, making it ideal for yogurt-based sauces. It also creates a clearer, glossier finish.
  • Use dry sherry or dry white wine, not sweet. Sweet wine throws off the balance of the sauce.
  • Serve immediately over egg noodles. The sauce thickens as it sits and can break if reheated too aggressively.

Directions

Melt diet margarine in nonstick skillet over Medium heat.

Add chicken and season with salt.

Cook, stirring constantly for 3 minutes.

Add onion and mushrooms.

Continue stirring for 2 minutes longer.

Add sherry or white wine.

Blend arrowroot and water in a cup.

Add to skillet.

Cook and stir rapidly until thick.

Stir in yougrt and paprika.

Cook just to heat.

Do not boil.

Serve with noodles and vegetalbes.
