The whole dish comes together in one skillet in about 15 minutes. Chicken strips cook first, then onion and mushrooms get a quick saute. Sherry deglazes the pan, arrowroot thickens the liquid, and yogurt gets stirred in at the very end.
Not boiling after the yogurt goes in is critical. Yogurt curdles under high heat and turns grainy. A gentle warm-through is all it needs to create a smooth, creamy sauce that clings to the chicken and mushrooms.

Directions
Melt diet margarine in nonstick skillet over Medium heat.
Add chicken and season with salt.
Cook, stirring constantly for 3 minutes.
Add onion and mushrooms.
Continue stirring for 2 minutes longer.
Add sherry or white wine.
Blend arrowroot and water in a cup.
Add to skillet.
Cook and stir rapidly until thick.
Stir in yougrt and paprika.
Cook just to heat.
Do not boil.
Serve with noodles and vegetalbes.
