This is the aromatic backbone that turns plain chicken into a proper Indian curry. Onion, garlic, ginger, and a small handful of whole warm spices. No premixed curry powder, no shortcuts. Just the building blocks that real curry leans on.

The whole spices are the whole point. Cardamom seeds, cinnamon stick, and cloves release their oils slowly as they bloom in hot fat, layering complex flavor into the dish in a way ground spices never can. Ground spices give you a flat color and aroma. Whole spices give you depth.

The onion-garlic-ginger trio at the front does the savory work. When you cook this mix in oil or ghee at the start of a curry, you’re building the masala base. The onions soften and caramelize, the garlic and ginger melt in, and the whole spices warm up and perfume the oil.

Use this in any chicken curry recipe that calls for a base masala. Start with hot fat, add this mix, cook until the onions soften and turn golden, then add tomato, your spice powders (turmeric, coriander, chili), and the chicken.

Pro Tips

  • Use this mix the day you make it. Fresh-cut onion and garlic don’t store well and lose their bite within hours.
  • For an even bolder base, grind the onion-garlic-ginger into a paste in a food processor before cooking. The paste browns deeper and faster.
  • Fish out the whole spices before serving the finished curry. Cinnamon stick and cardamom pods are aromatic, not edible.
  • Double the recipe and freeze in portions for instant curry nights. Press into ice cube trays for measured drops.

Variations

  • Add a bay leaf or two to the mix for extra herbal depth.
  • Swap in fresh green chilies for a built-in heat layer.
  • Stir in a pinch of saffron threads for a richer, more aromatic biryani-style base.
