30 minThe “Florentine” here means spinach, and it’s mixed right into the patty.
Chopped frozen spinach, torn bread, egg, and grated onion get combined with ground beef to create thick, juicy burgers that are greener on the inside than you’d expect. A quick broil on each side, a slice of melting mozzarella on top, and they’re ready to nestle into toasted English muffins.
It’s a clever way to get extra greens into a burger without anyone complaining.
Dinner in 30 minutes, start to finish.
Kitchen Tips
- Drain the spinach thoroughly. Squeeze it in a clean towel until no more water comes out. Wet spinach means mushy patties.
- Tearing the bread into small pieces helps it absorb moisture and bind the patties. It’s basically a panade, which keeps the burgers tender.
- Don’t skip the mozzarella broil at the end. That bubbly, stretchy cheese cap is what makes these special.
