70 minSkip the drive-through. This copycat recipe nails that rotisserie chicken flavor right in your own oven.
The secret is a simple basting sauce: vegetable oil, honey, fresh lime juice, paprika, and seasoned salt warmed together until the honey melts. That’s it.
Skin-on chicken breast halves go into the pan, get basted 3 to 4 times while they roast, and come out with a glossy, golden-brown skin that’s lightly sweet with a citrus edge.
The real trick happens after the oven. Seal the pan tightly in foil and let it rest for 15 to 20 minutes. The steam trapped inside finishes cooking the chicken gently and keeps the meat incredibly juicy.
Four servings, about 70 minutes total, and most of that is hands-off oven time.
Pro Tips
- Don’t skip the foil-sealed resting step. That 15 to 20 minutes of steaming is what takes the chicken from good to rotisserie-level juicy.
- Baste without flipping. Keeping the skin side up the entire time is what gets you that unbroken golden crust.
- Warm the basting sauce just enough to melt the honey. Don’t cook it; you just want it pourable.
Ingredients
Directions
Mix all ingredients well in saucepan and warm just to melt honey.
Arrange 4 chicken breast halves, skin-side-up in a square baking dish or pan, sprayed with cooking spray.
Bake uncovered at 400 degrees about 35 to 40 minutes, basting chicken without turning them, 3 or 4 times during baking or until nicely browned.
Immediately upon removing from oven, seal baking dish tightly in foil and let stand 15 to 20 minutes before serving.
