60 minThis is the back-pocket marinade that makes plain chicken breasts worth eating.
Soy sauce brings the salt and umami, honey adds a sticky sweetness that caramelizes on the grill, lime juice cuts through the richness, and garlic powder rounds it all out.
Mix everything together, pour it over boneless skinless chicken breasts, and give it at least an hour in the fridge. That’s the whole commitment.
From there, grill it, bake it, pan-sear it, or toss it under the broiler. The marinade does the heavy lifting no matter how you cook it.
Kitchen Tips
- One hour is the minimum, but overnight marinating builds much deeper flavor. The soy and lime tenderize the meat as they soak in.
- Pat the chicken dry before cooking if you want a good sear. Wet surfaces steam instead of browning.
- This marinade also works on thighs, drumsticks, or even pork chops. Scale the recipe up or down as needed.
