Pork with vegetables and cashews is a hands-off microwave dish: soy-seasoned pork, peas and mushrooms cooked in one casserole, thickened into a glossy glaze and finished with crunchy cashews. Easy over rice.

1 hrsHere’s a one-dish dinner that skips the wok entirely. This soy-glazed pork cooks start to finish in the microwave, simmering in a single covered casserole with onion, mushrooms and peas while you get on with other things. Stir it now and then and the microwave does the rest.
A cornstarch slurry stirred in near the end thickens the savory pork juices and soy into a glossy glaze that coats everything, the same trick that gives a stovetop stir-fry its sheen. Pimiento adds a pop of color.
The cashews are the finishing touch, stirred in at the very end and left to stand so they keep their buttery crunch instead of going soft. Spoon it all over steamed rice for a quick, satisfying meal.

Mix pork, onion and soy sauce in 3-qt casserole.
Cover and microwave on medium (50%) until meat is no longer pink, 12 to 15 minutes.
Stir every 3 minutes.
Stir in salt, pepper, peas and mushrooms.
Cover and microwave on medium (50%) 9 minutes.
Stir every 3 minutes.
Blend cornstarch and water; stir into meat mixture.
Stir in pimiento. Cover and microwave on medium (50%) until meat is tender, 9 to 12 minutes, stirring every 3 minutes.
Stir in cashews. Cover and let stand 5 minutes.
Serve with rice if desired.
