Unlike bottled wing sauce shortcuts, this version builds the heat from scratch with fresh garlic, lemon juice, tomato sauce, and Tabasco. The result is a sauce with more depth and tang than anything you’ll squeeze from a bottle.
The homemade blue cheese dressing is equally crucial. Real blue cheese crumbles suspended in mayo and sour cream give you that cooling contrast that makes the heat bearable (and makes you reach for another wing).

- Oil temperature is everything: Keep your frying oil at a steady 375°F. Too cool and the wings absorb grease and turn soggy. Too hot and they burn outside while staying raw inside.

Combine Miracle Whip and sour cream.
Crumble and stir in the blue cheese.
Cut the celery into sticks.
Chop onion and mince garlic.
Cook onion in oil over medium heat until soft, about 2 minutes.
Add the garlic and cook for one more minute.
Squeeze in the juice from the lemon.
Stir in tomato sauce, Tabasco and salt.
Cook for 5 minutes.
Remove wing tips and cut wings in half at the joint.
Heat oil for deep frying to 375℉ (190℃).
Cook wings in hot oil until brown, about 8 minutes.
Toss wings in tomato mixture.
Serve with chilled celery sticks and blue cheese dressing.
