The spice combination here is classic and warm. Allspice and cloves bring that familiar breakfast sausage aroma, while ginger adds a subtle heat underneath. Mix the spices thoroughly into the meat so every bite is evenly seasoned.
Cooking in batches of six is the right call. Crowding all twelve patties into one skillet drops the temperature and you end up steaming instead of browning. Golden brown edges are what you’re after.

- Use lean ground pork but not extra-lean. Some fat is needed for flavor and to keep the patties juicy.

Directions
Put the pork into a mixing bowl.
Add the salt, pepper, allspice, cloves, and ginger.
Stir well.
Divide the mixture into 12 portions.
Roll each portion into a ball and flatten it to make a patty.
Place a heavy 10-inch skillet over medium heat for 1 minute.
Arrange 6 sausage patties in the skillet and cook until golden brown (about 3 to 4 minutes on each side).
Put the cooked patties on an ovenproof plate and cover them with foil.
Put the plate in a warm oven (200 degrees F).
Remove any extra grease from the skillet.
Then cook the remaining 6 patties.
