This is bare-bones grilling at its best. Thick pork chops get a quick marinade of lime juice, chili powder, and garlic, then go on the grill over medium coals until juicy and just done. The salsa spooned over at the end does double duty: it cools the warm, smoky meat and adds fresh acidity without any extra sauce-making.

Lime and chili powder are the entire Southwestern seasoning system in two ingredients. The acid in the lime tenderizes the meat while the chili powder blooms into a smoky rub as the chops hit the heat. Garlic rounds out the edges and smells incredible on the grill.

Thick-cut chops are the right choice here. Thin chops overcook in the time it takes to build a proper char, leaving dry, sad pork. A 1-inch or thicker chop gets a real crust while the interior stays blushing pink and juicy.

The 5-to-6-inch distance from the coals and the three-to-four turn schedule are classic grilling math: far enough for even cooking without flare-ups, turned often so nothing scorches on one side.

Pro Tips

  • Pull the chops out of the fridge thirty minutes before grilling, cold chops make the outside burn while the inside stays raw
  • Use an instant-read thermometer; pork is done at 145°F (63°C) with a pink blush, USDA-approved and far juicier than the gray old-school 160°F finish
  • Let the chops rest five minutes tented loosely with foil before serving; the juices redistribute instead of running onto the plate
  • Choose a chunky salsa with visible tomato and onion over smooth jarred styles; chunks cling to the meat better

Directions

To grill pork chops, cover and grill them 5 to 6 inches from medium coals for 25 to 35 minutes, turning 3 or 4 times until done.
