Thai-inspired beef and noodles with a sherry-soy-ginger marinade that doubles as the pan sauce. Quick sear on sirloin, fast cornstarch reduction, weeknight dinner ready.

45 minSirloin marinated in sherry, soy, ginger, and garlic, then seared hot and sliced thin over noodles. The clever move here is reusing the marinade: after pulling the steak, you cornstarch-thicken what’s left into a glossy pan sauce so nothing gets wasted and every flavor lands on the plate.
Fifteen minutes of marinating is enough for sirloin since the cut is tender to start. Push longer and the soy will start curing the surface and pull moisture out. Slice the cooked steak against the grain into thin ribbons so each piece stays tender against the noodles.
Red pepper flakes carry the heat. Use tamari instead of soy sauce to keep the dish gluten-free without losing that salty backbone.

Ingredients
Directions
Combine sherry, soy sauce, ginger, garlic, oil, and pepper pods.
Place beef steak in plastic bag; add marinade.
Close bag securely and marinate 15 minutes.
Pour off marinade. Reserve.
Heat nonstick skillet over medium heat 5 minutes.
Add steak and cook 2 to 5 minutes for rare to medium, turning once.
Remove steak to cutting board and keep warm.
Dissolve 2 tablespoons cornstarch in reserved marinade and ¼ cup water; add to skillet.
Bring to a boil, stirring constantly. Stir in noodles.
Carve steak into thin slicesand serve over noodles.
Sprinkle with green onion.
