Thai Beef with Noodles

Ingredients

1 pound sirloin steak boneless, 1 inch thick
1/4 cup sherry dry
1 1/2 tablespoons soy sauce
1 teaspoon ginger freshly grated
1 teaspoon garlic mashed
1 tablespoon olive oil
1/4 teaspoon red pepper flakes
2 cups noodles cooked
1/4 cup scallions, spring or green onions chopped

Directions

Combine sherry, soy sauce, ginger, garlic, oil, and pepper pods.

Place beef steak in plastic bag; add marinade.

Close bag securely and marinate 15 minutes.

Pour off marinade. Reserve.

Heat nonstick skillet over medium heat 5 minutes.

Add steak and cook 12 to 5 minutes for rare to medium, turning once.

Remove steak to cutting board and keep warm.

Dissolve 2 tablespoons cornstarch in reserved marinade and 1/4 cup water; add to skillet.

Bring to a boil, stirring constantly. Stir in noodles.

Carve steak into thin slicesand serve over noodles.

Sprinkle with green onion.

Very good & easy. Best eaten hot, although even leftovers 2 days later were good.
