1 hrsThis is a humble, one-skillet supper that swaps the usual rice or pasta for bulgur, giving a familiar ground-beef dinner a nutty, whole-grain backbone.
It starts the easy way: brown the ground beef with onion and drain the fat. Then everything else goes into the same pan, the uncooked cracked wheat, tomatoes, water, a little bouillon, garlic, and oregano.
A covered, 30-minute simmer is all it takes for the bulgur to drink up the savory, tomatoey liquid and turn tender, thickening the whole dish as it cooks.
Stirred-in Parmesan adds a salty, savory richness at the end, and a scatter of fresh parsley keeps it bright.
It’s the kind of filling, fuss-free dinner that comes together in one pan and stretches a pound of beef into a meal for the whole table.
Kitchen Tips
- Drain the fat after browning the beef so the finished dish isn’t greasy.
- Keep the pan covered while the bulgur simmers so it steams and absorbs the liquid evenly.
- Stir the Parmesan in off a hard boil so it melts smoothly into the dish.
Variations
- Add a diced bell pepper, mushrooms, or a handful of spinach for extra vegetables.
- Use ground turkey or lamb in place of the beef.
- Punch up the seasoning with a pinch of red pepper flakes or a spoonful of tomato paste.
Ingredients
Directions
Cook and stir the meat and onion in a large skillet until the meat is brown.
Drain off the excess fat. Stir in the remaining ingredients except the grated Parmesan Cheese.
Heat to boiling then reduce the heat and simmer, covered, stirring occasionally, until the wheat is tender, about 30 minutes.
