This ground beef pepper steak takes the flavors of a Chinese pepper steak and simplifies them into a 20-minute weeknight dinner. Instead of slicing flank steak, you shape seasoned ground beef into 8 patties, sear them hard and fast, then cook green peppers in the same skillet with garlic and soy sauce.

The quick browning is key. You want a hard sear on both sides of each patty, not a slow cook-through. That caramelized crust adds the meaty, savory flavor that makes this taste like more than the sum of its seven ingredients. The patties finish cooking from residual heat while the peppers get their turn in the pan.

Directions

Mix ground beef, salt and pepper in bowl.

Shape into 8 patties.

Brown quickly on both sides in margarine in skillet.

Remove patties to platter.

Combine green peppers, garlic and soy sauce in skillet.

Cook, stirring constantly for 2 to 3 minutes.

Arrange on platter with patties. Serve with additional sauce.
