Quick beef and cheese burritos with seasoned ground beef, cottage cheese, salsa, and melted mozzarella wrapped in flour tortillas. A lighter take on the classic, ready in 30 minutes.

30 minThese burritos pull off a neat trick: they taste indulgent but sneak in cottage cheese instead of the usual sour cream, keeping things on the lighter side without sacrificing flavor.
Seasoned ground beef cooks up with garlic and green onions, then gets bound together with a creamy cottage cheese and salsa mixture spiked with oregano.
Roll it all in warm flour tortillas, top with melted mozzarella and extra salsa, and dinner is done in half an hour.
Kitchen Tips
- Warm your tortillas in a dry skillet for 15 seconds per side so they’re pliable and won’t crack when rolling.
- Drain the beef well after browning. Excess grease makes for soggy burritos.
- Swap the mozzarella for pepper jack if you want more heat.

Directions
Cook ground beef, onions, and garlic in a small saucepan until beef is no longer pink and onion is tender.
Drain off fat. Combine 2T of the salsa, the cottage cheese, cornstarch, and oregano.
Add to meat mixture in saucepan.
Cook and stir until thickened and bubbly.
Cook and stir for 2 minutes more. Divide meat mixture between tortillas; roll up.
Cover and keep warm.
In the same saucepan, heat remaining salsa. Pour over burritos.
Top with cheese.
