These burritos pull off a neat trick: they taste indulgent but sneak in cottage cheese instead of the usual sour cream, keeping things on the lighter side without sacrificing flavor.

Seasoned ground beef cooks up with garlic and green onions, then gets bound together with a creamy cottage cheese and salsa mixture spiked with oregano.

Roll it all in warm flour tortillas, top with melted mozzarella and extra salsa, and dinner is done in half an hour.

Kitchen Tips

  • Warm your tortillas in a dry skillet for 15 seconds per side so they’re pliable and won’t crack when rolling.
  • Drain the beef well after browning. Excess grease makes for soggy burritos.
  • Swap the mozzarella for pepper jack if you want more heat.
