These are Texas roadhouse burgers, named for Beaumont in the Gulf Coast region where Tex-Cajun BBQ tradition runs deep. Unlike most American burgers, these aren’t grilled and served dry; they get browned in a skillet then simmered in a quick barbecue sauce that soaks into the patty as it finishes cooking. Sloppy joe meets cheeseburger.

The sauce is constructed from pantry staples: tomato juice for body, lemon juice for acid, dry mustard for kick, and steak sauce for that aged-tangy umami. Each ingredient earns its place. Sugar balances the acid, salt brings the meat flavor forward.

Don’t overwork the beef. Mix salt and pepper into the ground beef with a light hand and shape into patties; aggressive mixing develops the proteins and makes tough burgers. Press a small thumb-dimple into the center of each patty so it doesn’t dome up in the skillet.

The quick simmer in the sauce is what makes these special. Three or four minutes at a gentle bubble lets the patty absorb sauce flavors without overcooking. Pull them at 160°F (71°C) internal for fully-cooked-but-juicy texture.

Serve on sesame buns with the pan sauce spooned generously over the top. Skip the lettuce; this is a knife-and-fork sandwich, more sloppy joe than hand-held.

  • A heavy skillet (cast iron is ideal) gives the best initial sear.
  • Save the leftover pan sauce; it freezes well and works as a marinade.

Directions

Mix beef, salt, and pepper.

Shape into 8 patties.

Brown on both sides in a non-stick or slightly greased skillet.

Mix remaining ingredients and pour over patties.

Bring to boil and simmer for a few minutes.

Serve on sesame roll with your favourite toppings.
