Shrimp Tostadas with Guacamole

Build-your-own grilled shrimp tostadas on crispy fried tortillas with refried beans, fresh guacamole, salsa, lettuce, and Mexican cheese. A fun, hands-on Mexican dinner that feeds a crowd in 40 minutes.

Put everything on the table and let everyone build their own. That’s the beauty of tostada night.

Golden fried flour tortillas get layered with warm refried beans, smoky grilled shrimp straight off the skewers, and a homemade guacamole blitzed smooth with lime, garlic, tomato, and a little hot chili pepper. Then it’s a free-for-all of salsa, shredded lettuce, chopped onion, and crumbled Mexican cheese.

It’s casual, interactive, and feeds eight people without stress. The kind of meal where everyone ends up reaching across the table and nobody cares.

Kitchen Tips

  • Fry the tortillas until truly golden and crisp. A limp tostada shell can’t support the toppings and falls apart on the first bite.
  • Grill the shrimp on skewers so they don’t fall through the grate. Thread them through both the head and tail end so they lay flat.
  • Heat the refried beans with a couple tablespoons of oil and stir well. This thins them out enough to spread easily without cracking the tostada.
  • Make the guacamole last so it stays bright green. Or press plastic wrap directly onto the surface if you need to hold it.

Shrimp and tostadas

X VEGETABLE OIL

Directions

Guacamole: Cut avocados in half and remove pits, Scoop avocado meat out of shell and place in food processor, add lime juice, process until pureed.

Add salt, onion, tomato, garlic, and small hot pepper to mixture and process again until finely pureed.

Transfer to small bowl to bring to table.

Fry tortillas: Heat 1 inch of oil in a shallow 8×9 inch skillet.

Slide tortillas one by one into oil and fry on each side until golden.

Remove immediately, drain on papper towels.

Grill shrimp, prepare beans: Thread shrimp onto 8×10 inch skewers and grill over coals.

While shrimp cook, transfer refried beans from can to saucepan Add 2 tbls.

oil, stir well, and heat over low heat.

When shrimp are cooked, remove the skewers transfer to small dish and bring to table.

Guest should make their own tostadas.

Spread the refried beans on top of a fried tostadas.

Arrange shrimp over this and spoon a little salsa and guacamole over shrimp.

Then add a little lettuce, onion and cheese over the top.

Top with parsley or cilantro.
