Ginger Shrimp

Ingredients

8 ounces salad dressing, italian
1/2 cup sherry dry
4 medium shallots peeled and halved
3 medium scallions, spring or green onions cut in pieces, or use 1/3 medium onion
2 inch peice ginger peeled and cut in pieces, or use 1 tsp. ground ginger
1 teaspoon soy sauce
1 teaspoon lemon juice
1 pound shrimp uncooked, cleaned and tails on

Directions

In food processor or blender, puree all ingredients except shrimp.

In large, shallow baking dish, combine dressing mixture with Cover and marinate in refrigerator, stirring occasionally, at least 3 hours.

Remove shrimp and marinade in large, shallow baking pan or aluminum-foil-lined broiler rack.

Broil shrimp with marinade, turning once, 10 minutes or until done.

Serve remaining marinade with shrimp.

Garnish as desired.
