Fruit and salmon might sound unusual, but the pairing works beautifully here. Thin slices of apple and pear get a quick saute in butter until just tender, soaking up all that richness without browning. The lime slices cook right alongside them, softening and releasing their citrus oils into the fruit.

The trick with the lime ends is clever. After sauteing, you rub them directly over the salmon steaks while squeezing out the juice. It’s a fresh, hands-on way to season the fish that distributes lime flavor unevenly in the best way, so every bite tastes a little different.

Thick-cut salmon steaks hold up well under the broiler. Seven minutes per side gives you a browned, slightly crispy surface with a moist center that flakes apart cleanly.

Kitchen Tips

  • Keep the fruit slices thin (about ⅛ inch). They need to soften in just five minutes without turning to mush.
  • Don’t brown the fruit. You want tender, buttery slices that taste fresh and sweet, not caramelized.
  • Use ripe but firm pears. Overripe pears dissolve in the pan and lose their shape entirely.

Variations

  • Try peaches or nectarines in place of the pear during summer for a seasonal twist.
  • Add a pinch of ginger to the butter for warmth that pairs well with both the fruit and the salmon.
  • Swap the broiler for a cedar plank on the grill to add smoky depth to the fish.

Directions

Prepare the fruit by thinly slicing the lime, including the ends.

Halve and core the apple and pear and cut into thin slices, about ⅛ inch.

In a large skillet, at a low heat, melt the butter and sprinkle with pepper.

Add the lime slices, turning to coat them with butter.

Add apple and pear and sauté until butter is absorbed by the fruit, about 5 minutes.

Fruit should be tender, but not browned.

Place salmon steaks on the grill.

Remove the lime ends from the sautéed fruit and rub over salmon, simultaneously squeezing juice.

Broil about 5 inches from the heat until brown, about 7 minutes.

Turn and repeat on the other side.

Carefully remove steaks.

Serve immediately with sautéed fruit complimented with Brown Rice Milanese and green beans with mushroom and sesame seeds.
