Fish in Foil

Ingredients

1 pound fish fillets divided
3 tablespoons lemon juice
1/4 teaspoon paprika
4 ounces onions sliced, divided
1 teaspoon parsley leaves chopped
1 teaspoon chives chopped
6 ounces potatoes peeled, cut, divided
1 x salt and black pepper
2 teaspoons margarine

Directions

Place 1/2 of fish fillets on a piece of foil.

Sprinkle each with lemon juice and paprika.

Place 1/2 of the onion slices on each fillet.

Combine parsley and chives. Roll potato in parsley mixture.

Arrange 1/2 potato sticks around each fillet.

Season each with salt and pepper.

Fold foil and secure tightly. Bake 325 degrees F. for 40 minutes.

Open foil and dot each with 1 ts margarine.

Sun-Dried Tomato Monkey Bread

Truly awesome. I made the dough myself using the bread dough dough cycle on the breadmaker. Also used some olive oil instead of 3/4 cup of butter to lighten things up. Next time I'll use canned parmesan instead of fresh shaved so it's more like bread crumbs. Incredible smell. Just toating it later for breakfast the next day made it worth it. Great breakfast/brunch bread.
