Crawfish Pies

Ingredients

1/4 pound butter or margarine
1 bunch shallots finely chopped
1/4 cup flour, all-purpose
1 can soup, cream of celery
1 can soup, cream of mushroom
12 ounce crawfish tails cooked
1 tablespoon sherry or white wine
1 x salt and black pepper to taste
1 teaspoon red hot pepper sauce (eg. Tabasco)
16 each pie shell (9 inch) prepared according to directions

Directions

Melt butter or margarine over medium heat and cook shallots 5 minutes.

Thoroughly blend in flour, then add both soups.

Cook another 5 minutes, then add tails, wine, salt and pepper and hot sauce.

Heat thoroughly, then fill pastry shells, top with parsley for garnish.
