Italian Cioppino

Ingredients

1 1/2 pound cod fillets
1 cup onions chopped
2 cloves garlic minced
2 teaspoons vegetable oil
8 ounces tomato sauce
28 ounces tomatoes, canned low-sodium, chopped, undrained
1/2 cup white wine dry, or water
1 teaspoon basil dried
1 teaspoon thyme
1 teaspoon marjoram
1 teaspoon oregano
1 teaspoon sugar
1 each bay leaf
1/4 teaspoon black pepper
4 whole cloves optional
1 tablespoon parsley leaves minced

Directions

Cut fish into 1/2 inch cubes and set aside.

Saute onion and garlic in oil until tender.

Add tomato sauce, tomatoes, liquid and all seasonings except parsley.

Let simmer 20 - 30 minutes, stirring occasionally.

Add fish and cook until done, about 10 minutes.

Add parsley.
