California Tamale Pie

Easy to make, but not as great as we hoped. 2 out of 5 in my family wouldn't eat it. I thought it was pretty good with salsa dumped over it but probably wouldn't make it again.

Ingredients

3/4 pound ground beef
2 1/2 cups milk
1 cup cornmeal
2 large eggs beaten
1 package chili seasoning mix
1 teaspoon garlic salt
14 1/2 ounces tomatoes cut up
8 ounces corn, canned, whole kernels
2 1/4 ounces olives ripe, drained, sliced
1 1/2 cups cheddar cheese shredded
2 tablespoons cornmeal

Directions

In medium skillet, brown ground beef; drain.

In medium bowl, combine milk, 1 cup cornmeal and eggs; blend well.

Add ground beef and remaining ingredients except cheese and 2 tablespoons cornmeal; stir to mix.

Pour into 12x8 inch, lightly greased baking dish.

Bake in 350F oven 35-40 minutes.

Sprinkle with cheese and 2 tablespoons cornmeal; continue baking until cheese melts.

Let stand 10 minutes before serving.

Made this for a company potluck. Browned the meat at home, mixed the dry ingredients and added them to the browned meat. Combined the meat mixture with the milk/egg and corn meal at work and plugged in the crock pot. Four hours later we celebrated birthdays. The crock pot was scrapped clean. Best rating I could have gotten. Everyone raved at how godd it was.

Beef in Red Wine

We really enjoyed this dish. The flavor was wonderful. I am going to use leftovers over noodles. However, I needed to use more cornstarch than the recipe called for to make the gravy thick enough
