California Cheeseburger Pie

All the flavors of a loaded cheeseburger baked into a Bisquick pie. Seasoned ground beef, melted cheddar, sliced tomatoes, shredded lettuce, and dill pickles on top.

60 minWhat if you could eat a cheeseburger with a fork? That’s basically what this is.
Seasoned ground beef and onions go into a greased pie plate. A quick batter of Bisquick, milk, and eggs gets poured right over the top and forms its own crust as it bakes. Sliced tomatoes and a blanket of shredded cheddar go on near the end so the cheese melts into bubbly golden perfection.
Pull it out of the oven, let it cool for five minutes, then pile on shredded lettuce and dill pickle slices. Every bite tastes like your favorite drive-through burger, but you made it at home in about an hour.
Kids go absolutely wild for this one. It’s a weeknight winner that feeds six to eight without any fuss.
Kitchen Tips
- Drain the cooked beef thoroughly. Excess grease will make the Bisquick layer soggy instead of fluffy.
- Beat the batter for a full minute so it’s smooth. Lumpy batter means an uneven crust.
- Add the tomatoes and cheese only in the last 5 to 8 minutes of baking so they don’t overcook.
- Drizzle with ketchup, mustard, or special sauce before serving for the full burger experience.

Heat oven to 400℉ (200℃).
Grease pie plate, 10 x 1½ inch.
Cook and stir beef and onion in 10 inch skillet until beef is brown;drain.
Stir in salt and pepper; spread in plate.
Beat baking mix, milk and eggs with wire whisk or hand beater until almost smooth, about 1 minute.
Pour into plate.
Bake 25 minutes. Top with tomatoes and cheese.
Bake until knife inserted in center comes out clean, 5 to 8 minutes.
Cool 5 minutes. Top with lettuce and pickles.
Makes 6 to 8 servings.
