Curry of Beef Kenya

A spicy and succulent curry dish that brings flavors from Kenya into your kitchen.

Ingredients

1 each onion sliced
1 teaspoon curry powder
2 tablespoons vegetable oil
1 teaspoon salt
1 teaspoon black pepper ground
2 pounds beef stew meat, cut in 1/2 inch cubes
2 cups beef broth use beef broth, water or the liquid drained from your choice of fruits
2 cups fruit use apples, pears, canned pineapple chunks, raisins or any fruit you prefer, cut into bite-size pieces
1 x rice hot, cooked
1 x onions green, chopped
1 x coconut grated, unsweetened
1 x peanuts chopped
1 x chutney

Directions

In a large Dutch oven, sauté onion and curry powder in oil over medium heat until onion is soft. Remove onions from pan. Increase heat to medium-high and brown beef (in batches, if necessary). To the crock pot, add onions, beef, salt, pepper and liquid(s). Cover and cook on LOW for 6-8 hours.

About 1/2 hour before serving time, add fruit(s). You may thicken stew with cornstarch mixture, if liquid is too thin. Serve over hot rice with your choice of condiments.
