This is the kind of quick-fix supper that lives in the back pocket of every busy cook: three main ingredients, one casserole dish, and a microwave doing most of the work. Boil pasta until just shy of al dente, fold in defrosted mixed vegetables and a pile of shredded cheese, then crown the top with wheat germ and a dusting of Parmesan for crunch. The microwave finishes it in about 15 minutes.

The reason it works is texture layering. The pasta finishes cooking while the cheese melts and pulls everything together, the vegetables warm through without turning to mush, and the wheat germ topping toasts just enough in the microwave to give the spoon something to crack through. It is genuinely a weeknight lifeline when you need food on the table with minimum fuss.

Kitchen Tips

  • Undercook the pasta by two minutes; it will finish softening in the microwave.
  • Shred your own cheese. Pre-shredded bags contain anti-caking starches that can keep cheese from melting smoothly.
  • If your microwave runs hot, stop at 10 minutes and check; every model is different.
  • A handful of breadcrumbs can stand in for wheat germ if that is what you have.

Variations

  • Stir in a cup of cooked chicken or canned tuna for a heartier main.
  • Use Italian-seasoned frozen veggies and mozzarella for a pizza-leaning version.
  • Swap the microwave for a 375°F (190°C) oven, bake 25 minutes, and broil 2 minutes at the end for a golden top.

Directions

Cook and drain the pasta.

Defrost the veggies and add. Add the cheese and seasonings.

Put into a 2 quart casserole dish, which has been sprayed with Pam (or equivalent).

Sprinkle liberally with wheat germ and lightly with Parmesan (if used).

Cook in microwave for 15 minutes.
