30 minPicture this: velvety avocado blended with rich cream and chicken broth, poured over golden chicken, then showered with shatteringly crispy bacon bits.
That’s the kind of dinner that stops forks mid-air and starts conversations.
Fresh ginger and sautéed onions give the sauce a subtle warmth that plays beautifully against the cool richness of the avocado. The whole thing bakes in just 20 minutes, which means you spend more time eating than cooking.
Chef Tips
- Use ripe but firm avocados so the sauce stays creamy without turning brown too quickly
- Grill or bake the bacon until it snaps when you break it; soggy bacon defeats the whole purpose here
- Blend the avocado mixture until silky smooth with no chunks for the best texture
- Poached or roasted chicken thighs hold up better than breast meat in this sauce
Ingredients
Directions
- bacon to be grilled until crispy and finely chopped.
Set oven at 400℉ (200℃).
Peel and slice the onions very finely and sauté with the spices in the butter until transparent.
Leave to one side.
Meanwhile, liquidize the avocados, stock and cream in a blender.
Mix in the onions and pour the mixture over the chicken in an ovenproof dish.
Sprinkle over the bacon and heat through for 20 minutes.
