Sometimes dinner needs to be stupid easy. This is that recipe.

Chicken breasts go in the center of a baking dish, diced potatoes on one side, frozen green beans on the other.

Melted butter mixed with a packet of dry Italian dressing seasoning and a splash of water gets poured over everything.

That’s it. Into the oven it goes.

The butter and seasoning melt together into a savory glaze that bastes the chicken and coats the vegetables as they roast. One dish, one hour, dinner done.

Kitchen Tips

  • Cut the potatoes small: Dice them into half-inch cubes so they cook through in the same time as the chicken.
  • Spread things in a single layer: Crowding the pan steams the food instead of roasting it. Use a big enough dish.
  • Experiment with the seasoning packet: Ranch, garlic herb, or zesty Italian all work. Pick your family’s favorite.

Directions

Put the chicken in the center of a baking dish (like for lasagna, you can stack the chicken) put the potatoes on one side and the beans on the other.

Melt ½ stick of butter/margarine or use olive oil and 2 ozs of water-mixed with a dry package of good seasons dressing (you pick the kind you like, we buy the cheapest which is usually the original style), pour over the chicken, beans and potatoes.

Bake.
