Salmon-Corn Casserole

Ingredients

2 large eggs boiled, chopped
16 ounces salmon, canned drained
16 ounces creamed corn
1 cup stuffing mix dry herb
1 each onion chopped
1/4 cup pimento diced
1/4 cup mayonnaise

Directions

Combine and mix all ingredients.

Pour into 6 individual oven proof dishes or a 1 1/2 quart casserole.

Bake at 350 degrees F for 25 minutes for small dishes or 45 minutes for the casserole.

Sweet Potato & Red Pepper Salad

Very fast cooking, and all the materials are healthy, the whole wheat pasta,sweet potato,tomato, red pepper,garlic, hmmm and very yummy too, I can't wait to try it again tomorrow!
