Rolled Oat Burgers

Ingredients

2 cups water
2 cups rolled oats
2 tablespoons soy sauce, tamari low-sodium
1 tablespoon olive oil
2 teaspoons olive oil
1 cup onion diced
1/2 cup carrots grated
1/2 cup celery diced
1/2 cup sweet red bell peppers diced
2 each garlic cloves minced
2 teaspoons oregano dried
6 each basil fresh, minced
1/2 teaspoon black pepper freshly ground

Directions

Bring water to a boil in a saucepan over medium-high heat.

Add oats, tamari or soy sauce and 1 tb oil.

Reduce heat to low and cook 2 minutes, remove from heat and set aside.

In skillet, heat the remaining oil over medium heat.

Add rest of ingredients and sauté 2 minutes or until vegetables are softened.

Add t cooked oat and combined well.

Chill at least 2 hours or overnight.

Preheat oven to 375 degrees F.

Using an ice cream scoop (1/4 cup), portion mixture.

Form each portion into a ball and flatten slightly.

Place on a lightly oiled baking sheet and bake 20 minutes until golden brown.

100% Parmesan Chicken

Wow! My picky husband and son loved this! I used skinless/boneless chicken breasts and baked for about 15 minutes. Fast and easy recipe. Will add to my permanent rotation.
