Think of this as a meatloaf that decided to become a pie, and honestly, the upgrade is worth it.

Seasoned ground beef mixed with sour cream, bread crumbs, and onion soup mix gets pressed into a pie plate to form the crust itself.

After baking until firm, you pile on cheddar cheese and hot cooked vegetables, then pop it back in the oven just long enough for everything to get gooey and golden.

It’s hearty, it’s hands-on, and it feeds six hungry people from one pan.

Pro Tips

  • Drain the meat crust well after the first bake so the finished pie isn’t greasy
  • Use any mix of vegetables you like: frozen peas, corn, green beans, and carrots all work great
  • The microwave method is a solid shortcut for busy nights
  • Let it rest a few minutes after baking so slices hold together when you cut
