These apple-oat pancakes are what happens when you want something more substantial than regular pancakes but still crave that fluffy texture.

Rolled oats mixed right into the batter add chew and fiber, while grated apple creates little pockets of moisture and sweetness.

Cinnamon ties it all together, and the whole thing cooks up in minutes on a hot griddle.

Kitchen Tips

  • Grate the apple right before mixing so it doesn’t oxidize and turn brown

Directions

Mix together the rolled oats, flour, baking powder and cinnamon.

Beat in the eggs and the milk (or apple juice).

Add the grated apple.

Mix well.

Spoon one-fourth of the mixture at a time onto a hot, lightly oiled skillet.

Using a spatula, spread the batter out to a thickness of about ⅓ of an inch.

Cook over medium-high heat until bubbles appear and the surface begins to dry out.

Turn over and cook until done.
