Bollito Di Manzo [Boiled Beef]

Ingredients

3 pounds beef brisket
3 teaspoons salt
1 each celery stalk, with leaves
1 each carrot
1 each onion small
1 each bay leaf small
3 each italian plum (roma) tomatoes
5 each peppercorns
1 each beef bones

Directions

Beef brisket boiled with seasoning vegetables gives you the extra benefit of the broth to use as needed.

This broth freezes very well.

Chop all vegetables quite coarsely.

Put beef and vegetables in a large pot (a stock pot is ideal) with cold water to cover.

Bring to a boil slowly over medium-low heat.

As the water boils, remove the froth that forms as much as possible.

Lower heat to simmer, cover the pot, and cook for 3 hours.

The meat will be very tender and the broth a light brown.

Remove meat from the pot and use in any recipe that calls for boiled beef.

Strain broth and use immediately or freeze for future use.

Apple and Cranberry Muffins

Turned out very good. I was worried how they would turn out considering that there was absolutely no butter or oil in the recipe at all! They didn't rise as much as more traditional recipes but turned out great with a lovely rustic home-made appearance. Not too sweet, lots of chunks of apple and cranberries, bursts of sweet vs. sour. The texture was slightly like a sponge cake. I would recommend filling the muffin cup from 2/3 up to full.
