20 minVegan French toast sounds like a contradiction until you discover that pureed soft tofu makes a custard so close to the egg-and-milk original you won’t miss them. The tofu blends into a creamy slurry that coats and clings to bread the same way beaten eggs do, frying up to that classic golden custardy interior with crisp edges.
Silken or soft tofu is the right call here, not firm. The water-bound proteins in soft tofu purée smooth, while firm tofu stays grainy no matter how long you blend it. If you can only find firm, add an extra splash of water and a teaspoon of cornstarch to compensate.
Whole-wheat bread gives this version more character than white bread would. The nuttier flavor of whole grain stands up well to the rich custard, and the slightly denser crumb soaks up just enough without falling apart.
Let the bread soak for at least 30 seconds per side. Tofu custard is thicker than egg custard and needs a little extra time to penetrate the crumb. Press the bread gently into the mixture to encourage absorption.
Pro Tips
- Use slightly stale bread, day-old at minimum. Fresh bread turns soggy and falls apart in the pan.
- Add a pinch of cinnamon and a quarter teaspoon of nutmeg to the blend for warmer spice depth. The recipe doesn’t include these but they elevate the result.
- Fry in coconut oil instead of margarine for tropical notes that play beautifully against the tofu base.
- A splash of plant milk or oat milk can replace some of the water for a richer custard.
Variations
- Use challah or brioche-style vegan bread for a richer, more decadent version.
- Add a tablespoon of maple syrup to the blend itself for naturally sweetened toast.
- Top with fresh berries, sliced banana, and a drizzle of nut butter for a complete plant-based breakfast.

Put the tofu, water, oil, salt, vanilla extract and sugar in blender or food processor and blend thoroughly.
Pour the mixture into a shallow bowl and dip in the slices of bread.
Heat the margarine or oil in a skillet and fry the dipped bread over a moderate heat until browned on both sides.
Serve with maple syrup or jam.
Or, serve with a mixture of sugar and cinnamon powder.
