A savory bread machine loaf that swaps the usual butter or oil for applesauce. The apple-pulp-and-water mixture provides moisture and tenderness without adding fat, making this a notably lighter herb bread than versions calling for half a stick of butter.

Three dried herbs handle the savory profile: dill weed, basil, and rosemary. Each one contributes something different. Dill brings grassy brightness, basil layers in sweet anise-like notes, rosemary delivers piney depth. Together they produce a complex herb signature that single-herb breads cannot match.

Chopped raw onion goes in straight (the recipe does not call for sauteing it first). Bread machine kneading and the long warm rise softens the onion enough that it ends up sweet and mellow rather than sharp. The onion juice also adds savory depth to the bread itself.

Milk in place of water creates a softer crumb than all-water doughs. Combined with the applesauce, the bread reads almost like a hybrid sandwich bread / dinner roll dough, soft enough to slice for sandwiches but flavorful enough for the dinner basket.

Slice and toast for grilled cheese with sharp cheddar, or pair with butternut squash soup for a fall meal.

  • Add ingredients in your machine’s specified order (yeast last in most models).
  • Watch the first knead. Onion releases water as it mixes, so the dough may need a tablespoon or two of extra flour.
  • Use light or medium crust setting. Dark crust over-toasts the savory bread and the herbs taste bitter.
  • Cool fully before slicing. Hot herb bread tears under a knife and the crumb stays gummy.

Variations

  • Substitute fresh herbs for dried (use three times the quantity since fresh is less concentrated).
  • Add a quarter cup of grated parmesan for cheesy herb bread.
  • Sub whole wheat for one cup of the bread flour for a heartier loaf.
