Three dried herbs handle the savory profile: dill weed, basil, and rosemary. Each one contributes something different. Dill brings grassy brightness, basil layers in sweet anise-like notes, rosemary delivers piney depth. Together they produce a complex herb signature that single-herb breads cannot match.
Chopped raw onion goes in straight (the recipe does not call for sauteing it first). Bread machine kneading and the long warm rise softens the onion enough that it ends up sweet and mellow rather than sharp. The onion juice also adds savory depth to the bread itself.
Milk in place of water creates a softer crumb than all-water doughs. Combined with the applesauce, the bread reads almost like a hybrid sandwich bread / dinner roll dough, soft enough to slice for sandwiches but flavorful enough for the dinner basket.
