30 minThis is a Halloween party novelty salad, playful on the plate and surprisingly fresh on the fork. The “hairballs” are just mashed avocado mixed with alfalfa sprouts, squished into walnut-sized balls so the sprouts poke out like stringy fur. It looks gross. It tastes great.
Grated carrots form the orange base that makes the green balls pop visually. The color contrast is the whole point, bright orange against creamy green-flecked lumps.
The Italian dressing is the “saliva” gag. Don’t overthink the name, the tang of vinegar and herbs cuts through the rich avocado and perks up the carrots.
Keep the mash intentionally lumpy. A smooth puree loses the hairball texture and defeats the whole joke.
Kitchen Tips
- Use ripe-but-firm avocados. Overripe turns to soup, underripe won’t mash into a cohesive ball.
- Wet your hands slightly before rolling the balls. Avocado sticks to dry fingers and falls apart.
- Assemble right before serving. Exposed avocado browns fast, and the carrots weep liquid into the bowl.
- A splash of fresh lemon juice in the mash slows the browning and adds brightness.
Variations
- Use cooked spaghetti squash or shredded beet in place of carrots for a different colored bed.
- Swap alfalfa sprouts for microgreens or fresh dill for a more refined look.

Cut avocado in half.
Use a spoon to scopp out the pit.
Scoop avocado out of the shell and put in the bowl.
Add sprouts to the avocado meat.
Mash with a fork.
It is ok to leave some lumps.
Set the mixture aside.
Divide the grated carrots among the four salad bowls.
Using your clean fingers and a spoon, make walnut size hairballs from the avocado mixture and arrange them on top of the grated carrots.
Pour Italian “saliva” dressing over hairballs and serve.
