Dump the lot into the pan, close the lid, hit start. That’s the whole job. What comes out three hours later is a dark, chewy loaf that smells like a Saturday morning at a German bakery: warm molasses, toasted caraway, and the nutty depth of whole-grain wheat.

The blend matters here. Straight whole wheat flour bakes up dense and bricklike in a machine; cutting it with bread flour gives the gluten enough backbone to hold a real rise while keeping the rustic, earthy character.

Molasses does double duty: it feeds the yeast and lends that dark, slightly bitter sweetness you can’t fake with honey or sugar alone. Use unsulfured for the cleanest flavor; blackstrap will turn the loaf almost black and push the bitterness too far for sandwich bread.

Warm water (think bathwater, not hot) wakes the yeast without killing it. Test with the inside of your wrist before pouring it in.

Kitchen Tips

  • Add ingredients in the order your machine’s manual specifies, usually wet first, dry on top, yeast last in a small well so it doesn’t touch the salt or liquid before mixing starts.
  • If the dough looks dry and crumbly after the first knead, add water a tablespoon at a time. Whole wheat flour drinks more liquid than white.
  • Toast the caraway seeds in a dry pan for 30 seconds before adding for a much bigger flavor hit.
  • Cool fully on a wire rack before slicing or the crumb will gum up under the knife.

Variations

  • Swap caraway for fennel seeds for a sweeter, anise-leaning loaf.
  • Stir in a handful of raisins and a teaspoon of cinnamon at the mix-in beep for a breakfast-style bread.
  • Use honey in place of half the molasses for a lighter, mellower crumb.
