Tomato Sauce with Ground Beef

Ingredients

2 tablespoons olive oil
1 x garlic clove minced
1 can italian plum (roma) tomatoes 28oz
1 can tomato paste 6 oz
1 x salt to taste
1/2 teaspoon oregano dried
1 each bay leaf whole
1 cup onion chopped
1 pound ground beef
1 can tomato sauce 15 oz
2 tablespoons italian parsley chopped
1 teaspoon basil dried
1/4 teaspoon black pepper

Directions

Heat oil in a large heavy saucepan; add onion; sauté over low heat, stirring, until tender and golden, about 5 min.

Add the garlic; sauté 1 min.

Meanwhile, brown the ground beef in a skillet, stirring to crumble meat; drain off fat; add to the onion mixture.

Add the tomatoes, tomato sauce, 1 tomato sauce can filled with water, the tomato paste, parsley, 1 tsp salt, the basil, oregano, pepper, and bay leaf.

Heat over medium-low heat to simmering.

Simmer, uncovered, over low heat, stirring occasionally until sauce is thickened and flavorful, about 1 hour and 15 minutes.

Bev's Green Bean Casserole

I did not have the corn to add, but I made the rest as described and this was devoured over Christmas. Even by my Mother who despises CANNED green beans. She had 3 servings and asked for the recipe!
