Ground beef gets browned with onion and garlic, then tossed with chunky fresh tomatoes, green bell pepper, and a savory hit of soy sauce before being stirred into tender egg noodles.
Everything goes into a baking dish for a quick trip to the oven, and dinner is served.
No fancy technique required. Just solid, belly-filling comfort food that comes together in half an hour.
Kitchen Tips
- Drain the beef well after browning to keep the casserole from getting greasy.
- Use fresh, firm tomatoes so they hold their shape and don’t turn the noodles mushy.
- For a gluten-free version, swap egg noodles for rice noodles and use tamari instead of soy sauce.
- Top with shredded cheddar or mozzarella during the last 5 minutes of baking for a cheesy crust.
