Sliced Roma tomatoes fan across a platter with rings of sweet Maui onion and a generous scatter of coarsely chopped fresh basil. A light splash of white wine vinegar and olive oil is all the dressing it needs.
Garnish with whole chives laid across the top for a look that’s equal parts rustic and elegant.
Make it an hour ahead and the flavors only get better as they sit.
Kitchen Tips
- Maui onions are prized for their natural sweetness. If you can’t find them, Vidalia or Walla Walla onions are great substitutes. Red onion works too but has more bite.
- Use the freshest basil you can get. Tear it by hand rather than chopping if you want to prevent the leaves from bruising and turning dark.
- This salad pairs beautifully with grilled fish, kalua pork, or alongside a bowl of poke for a Hawaiian-inspired spread.
