Thai Burgers with Mint Cucumber Relish

Ingredients

1 pound ground beef, lean
1 pound ground beef, lean
1 tablespoon lemon grass
1 tablespoon lemon grass chopped
1/4 cup cilantro fresh chopped
1/4 cup cilantro chopped
2 teaspoons soy sauce or thai fish sauce
2 teaspoons fish sauce
1 x relish
1 teaspoon brown sugar
1/2 teaspoon lime zest grated
1/2 teaspoon oriental chili paste hot
1/2 teaspoon salt
1/2 cup bread crumbs fresh
--- Relish
1/2 each cucumber chopped
1/4 cup mint fresh, chopped
1 tablespoon soy sauce or thai fish sauce
1 tablespoon rice vinegar

Directions

Combine burger stuff, shape into 4-6 burgers.

Drain chopped cucumber; mix in remaining ingredients; reserve.

Just before serving, heat grill and brush with oil.

Cook burgers and 4 minutes per side, turning once.

Makes 4-6 servings.

(If lemon grass is very dry, soak 20 minutes before using. If you cannot find lemon grass, use 1 teaspoon grated lemon peel.)

Naturally Sweet Pineapple Muffins

These muffins have a pleasant mild pineapple flavor and a good consistency. They are great for a diabetic diet or anyone wanting a sweet treat w/o the added sugar. Much better than bakedgoods made with artificial sweeteners. For variation, I would consider using less pineapple & adding blueberries and/or nuts. I filled 17 regular size aluminum muffin cups.
