Date night doesn’t need a reservation.

This bistro-style dinner puts two filet mignon steaks in a hot skillet, sears them to your liking, and tops each one with a knob of Gorgonzola butter spiked with rosemary and thyme that melts into a rich, herby sauce right on the plate.

The whipped potatoes come together in the microwave while the steaks cook, beaten smooth with more of that same Gorgonzola butter and a splash of milk.

Two components, one compound butter, zero stress.

Open a bottle of red, dim the lights, and you’ve got a restaurant-quality dinner without leaving the house.

Pro Tips

  • Make the compound butter first and let it sit at room temperature so it melts instantly on the hot steaks.
  • Pat the steaks dry before they hit the skillet. Moisture is the enemy of a good sear.
  • Use real Gorgonzola, not generic blue cheese. The creamier texture melts better and the flavor is more nuanced.
  • Let the steaks rest for 3 to 4 minutes after cooking before adding the butter. This keeps the juices in the meat instead of running all over the plate.

Directions

Place potatoes in shallow 1-quart microwave-safe dish.

Cover with plastic wrap, venting one corner.

Microwave on HIGH 5 minutes until tender.

Meanwhile, in small bowl thoroughly mix butter, cheese, rosemary, thyme and pepper.

With electric mixer beat potatoes, 3 tablespoons of the butter-cheese mixture and the milk until smooth.

In medium nonstick skillet over medium- high heat add oil and pan fry steaks to desired doneness, turning once.

Microwave potatoes on HIGH 1 to 2 minutes until hot.

Top each steak with 1½ teaspoons of the remaining butter-cheese mixture.

Serve with potatoes.

NOTE: Microwave cooking times are based on a 700-watt oven.
