Sweet Potato Salad

Ingredients

1 pound sweet potatoes, or yams baked
1/2 cup green peas cold cooked
1/2 cup pineapple unsweetened, crushed
3 tablespoons parsley leaves freshly chopped
1/3 cup salad dressing, fat-free any type
8 each lettuce leaves optional

Directions

Peel and slice sweet potatoes and place in a small bowl.

Add remaining ingredients; toss lightly.

If desired, serve on lettuce leaves.

Samosas (Frugal)

I didn't use the pastry in this recipe, but the fillings were all quite delicious. I just threw them in a skillet , as easy as that.
