Ingredients

5 pounds pork shoulder butt coarse, ground
3 teaspoons fennel seeds
2 teaspoons white pepper
1 1/2 teaspoons sage leaves
5 each garlic cloves pressed
3 teaspoons salt
1 cup white wine

Directions

Combine all ingredients, mix well and stuff into hog casing or make patties.
