Stir-Fried Ginger Beef (Nua Pad King)

Ingredients

1/4 cup vegetable oil
1 each garlic clove minced
10 ounces beef, sirloin steak cut into 1/4 by 1 inch strips
1/2 cup ginger fresh, peeled, very thinly sliced
1 tablespoon fish sauce nam pla
1 tablespoon soy sauce
2 tablespoons oyster sauce
1 1/2 teaspoons brown sugar firmly packed
1 3/4 cups green bell pepper thinly sliced
1 cup onion thinly sliced
1 1/2 cups rice, cooked

Directions

Heat oil in wok or large skillet over medium-high heat.

Add garlic; stir-fry until browned, 20 to 30 seconds.

Add beef and stir-fry until browned.

Add ginger, fish sauce, and soy sauce; stir-fry for 1 minute.

Mix in oyster sauce and sugar.

Add bell pepper and onion.

Cover, remove from heat and let stand for 2 minutes.

Serve hot over freshly-cooked rice.
