Lemon gelatin dissolved in hot water gets stirred together with strawberry ice cream until smooth and creamy, then chilled just enough to thicken before folding in sliced fresh strawberries.
Pour it into a baked pie shell, let the fridge do the rest, and top with a ring of whipped cream and a few berry slices.
No oven time, no fuss, and the whole thing can come together in about an hour.
Variations
- Pineapple Parfait Pie: Skip the water and use pineapple juice from a can of crushed pineapple instead. Swap the strawberry ice cream for vanilla and fold in the drained crushed pineapple. Tropical, creamy, and just as easy.
Kitchen Tips
- Watch the gelatin mixture closely while it chills. You want it thickened like raw egg whites, not fully set. About 15 minutes in the fridge usually does it.
- Use a pre-baked pie shell that’s completely cooled. A warm shell will melt the filling before it has a chance to set.
- This pie is best served the same day. The gelatin softens the crust if it sits overnight.

Directions
About 1 hr. before serving or early in day: In 2-qt. saucepan, dissolve gelatin in hot water.
Add ice cream by spoonfuls, stirring until melted.
Refrigerate right in pan until thickened but not set--about 15 min.
Fold in berries, reserving a few for garnish.
Turn into baked pie shell.
Refrigerate until set--about 25 min.
Garnish with circle of whipped cream.
Tuck in reserved strawberry slices.
PINEAPPLE PARFAIT PIE: Omit water; use pineapple juice drained from 1 No. 2 can crushed pineapple, plus enough water to make 1¼ cups liquid.
Substitute vanilla ice cream for strawberry.
Omit strawberries. Fold in drained canned crushed pineapple from 1 No. 2 can.
